Eunice has two children in St. Louis Park public schools where she served as the elementary school site council chair, and as chair of the St. Louis Park legislative task force (2000-2004). In April 2002, Eunice organized the first meeting of interested parents to discuss growing concerns about the divisive public education policy discussion in Minnesota. This meeting served as the catalyst for the Save Our Schools Campaign and, ultimately, Parents United for Public Schools. In October 2005, Eunice resigned from the Parents United board to provide operational and administrative support as Associate Director. She enjoys reading, movies, hiking, camping, and dinner and conversation with friends and family. “A pivotal moment for me was being at the legislature in 2001 and realizing that there were a lot of parents there from a lot of different districts. That’s when I saw different districts being pitted against each other for a slice of an insufficient pie.
